Black Bean Soup

In a large saucepan, combine onion, oil, garlic, oregano, cumin, and salt to taste. Cook, stirring, over medium heat until softened, about 3 minutes. Stir in beans and broth. Reduce heat to medium-low. Cook, stirring occasionally, for 10 minutes. Mash some beans against side of pan.
Package shredded cheese separately from soup for your child to add just before eating.
- 125 ml chopped onion
- 30 ml extra virgin olive oil
- 5 ml minced garlic
- 5 ml oregano
- 5 ml cumin
- 1 can black beans, rinsed and drained
- 500 ml vegetable or chicken broth
- 60 ml shredded cheese (cheddar or any other kind your child likes)
