Yummy Muesli Pancakes

Mix the sifted flour, baking powder and salt into a mixing bowl stirring well. Next stir in the muesli and the sugar Seperate the eggs and add the egg yolks to milk whisking briskly. Whisk the egg whites until they are stiff. Mix the beaten egg yolks into the muesli and flour, then fold in the stiff egg whites carefully. The mixture should look like a batter now. Heat up a non stick frying pan and add a small amount of oil (size of a two pence coin) to the hot pan. Add the mixture to the hot pan in spoonfuls to the desired size oif your pancakes. Cook on each side for 2-3 minutes or until golden. Serve immediately.

They taste lovely with honey!

125g plain flour, 75g muesli, 25g caster sugar, 284ml milk, 2 eggs, 1 tsp baking powder, a pinch of salt, and cooking oil
