Make it

In a mixing bowl, mash garbanzo beans with a fork. Add yogurt, bell pepper, and blend thoroughly. Chill overnight. In the morning, cut pita in half to form pockets and stuff with the bean mixture. Add lettuce and cheese.

You will need

  • 1 can garbanzo beans, rinsed and drained
  • 175 mL plain yogurt
  • 75 mL red bell pepper, diced
  • 30 mL green onion, diced
  • 4 pieces of whole grain pita bread
  • A few torn lettuce leaves
  • 75 g shredded cheese
