Mushroom Leek Soup

Make it

Combine the butter and olive oil in a stock pot and heat over medium heat. Saute the mushrooms and leeks until tender, about ten minutes. Add the broth and pepper and bring to a boil. Add orzo, reduce heat slightly, and simmer for ten minutes, or until pasta is cooked through.

Cheweee tip

Serve this dish on the side of a hamburger with roasted vegetables for a full meal.

You will need

  • 100 g fresh mushrooms, sliced
  • 100 g thinly sliced leeks
  • 25 g butter
  • 30 ml extra virgin olive oil
  • 1 L vegetable or beef broth
  • 1 g pepper
  • 100 g uncooked orzo pasta
