Combine all ingredients in a mixing bowl and toss. Refrigerate overnight to let the flavours mix. Serve as a side dish with a protein-rich entr‚e and fruit to make a complete meal.
Add 65 g of thinly sliced almonds to this salad if your child likes a little extra crunch!
- 1 medium cucumber, cubed
- 2 courgette or other summer squash, cubed
- 250 g tomatoes, sliced
- 100 g plain organic yogurt
- 8 g fresh basil, fresh parsley
- 4 g sugar
- 2 g salt
