Fresh Vegetable Salad

Toss all ingredients in a mixing bowl until just combined. Chill for at least one hour.
Make this salad as a crunchy topping for a meat patty or fish filet!
- 8 tomatoes, diced
- 1 cucumber, peeled and diced
- 130 g peeled chopped carrot
- 1 small yellow bell pepper, diced
- 85 g diced onion
- 45 ml fresh lemon juice
- 45 ml extra virgin olive oil
- 2 g dried parsley
- Salt and pepper to taste
