Banana Oat Muffins

Preheat the oven to 205 degrees and line a muffin tin with paper baking cups. In a mixing bowl, whisk together flour, oats, sugar, baking powder, soda, and salt. In a second bowl, beat egg with milk, melted butter, and vanilla. Add the mashed banana and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Divide between muffin cups and bake for 20 minutes.
Add 80 g ground almonds to the muffin batter if your child needs extra protein!
- 190 g whole grain flour
- 80 g rolled oats
- 80 g honey
- 9 g baking powder
- 5 g baking soda
- 3 g salt
- 1 egg
- 180 ml milk
- 80 ml melted butter
- 3 ml vanilla extract
- 225 g very ripe mashed bananas
