Vegetable Cheese Pockets

Preheat oven to 190 degrees C. Combine cream cheese, mayonnaise, vegetables, and cheese. Divide filo pastry into ten squares. Spoon mixture into each square and fold pastry over diagonally and press edges together to form triangles. Bake for fifteen minutes or until cooked thoroughly. Remove, cool, and store.
Top each triangle with a thin slice of tomato and a fresh basil leaf for an attractive presentation.
- 500 g refrigerated filo pastry
- 500 g cream cheese, softened
- 1 cup mayonnaise
- 1250 ml fresh broccoli, chopped
- 250 ml chopped tomatoes
- 250 ml chopped green bell pepper
- 250 ml chopped cauliflower
- 250 ml shredded carrots
- 250 ml shredded cheese (any kind your child likes)
