Curried Courgette and Apple Soup

Combine all ingredients except cream in a stock pot and heat over medium-low until thoroughly cooked, about 45 minutes. Puree with an immersion blender or regular blender, add cream, stir, and store.
Serve this soup with sticks of white cheddar and multigrain toast for a complete meal!
- 700 g courgette, sliced
- 2 large apples, peeled and chunked
- 2 large onions, finely chopped
- 125 ml white rice
- 1 L chicken broth
- 30 ml curry powder
