Fruit and Honey Sandwich

In a small mixing bowl, thoroughly combine cream cheese, fruit, lemon juice, and honey. Spread cream cheese mixture thinly on each slice of bread. Evenly distribute shredded carrot over one slice of bread and top with the other slice. Wrap tightly and refrigerate.
Use whole grain banana bread with seeds and nuts to make a more nutritionally complete sandwich!
- 2 slices seeded whole grain bread
- 10 ml cream cheese
- 10 ml diced peaches or apples
- 2 mL lemon juice
- 5 ml honey
- 10 ml peeled and shredded carrot
