Apple Ricotta Roll

Preheat oven to 180°C and butter a baking sheet. In a mixing bowl, combine the apple, brown sugar, golden raisins, almonds, and cinnamon. Add the ricotta and mix the apple, sugar, raisins, walnut and cinnamon in a large bowl until well combined. Add the ricotta and mix until combined. Lay the filo pastry out flat and brush with melted butter. Layer evenly with apple mixture and roll up pastry. Brush completed roll with any remaining butter. Bake 30 minutes or until golden brown. Cool, then dust with icing sugar.

- 2 large firm apples, peeled, cored, and cut into 2cm pieces
- 70g brown sugar
- 65g golden raisins
- 30g finely chopped almonds
- 5 ml ground cinnamon
- 300g ricotta
- 8 sheets filo pastry
- 50g butter, melted
- 10 g icing sugar
