Peas and Rice

Heat oil in a medium saucepan over medium heat. Cook onion until translucent but not brown, 3 to 4 minutes. Add rice. Cook, stirring occasionally, 2 to 3 minutes more. Add peas, broth, salt and pepper. Bring to a boil. Cover and reduce heat to low. Simmer until rice is tender, 12 to 15 minutes. Sprinkle cheese on top and refrigerate.
- 20 ml extra virgin olive oil
- 1/2 small onion
- 125 ml white rice
- 300 ml fresh peas
- 250 ml chicken broth
- 5 ml salt
- 3 ml black pepper
- Grated parmesan to taste
