Aubergine Chips

Peel aubergine and cut them into thin rounds, placing them in a single layer on aluminum foil. Lightly brush rounds with olive oil and sprinkle with salt. Place into preheated 232°C oven or toaster oven until browned, approximately 20 minutes.
Place cooked aubergine rounds on a paper towel and package with paper towel in your child's lunch to soak up excess oil.
- 2 baby aubergines
- 2 ml sea salt
- 1 ml extra virgin olive oil
