Preheat oven to 180°C. In a mixing bowl, whisk eggs, salt, and pepper thoroughly. Heat oil in a cast iron frying pan on a high heat. Add mushrooms and saut‚ 8-10 minutes. Stir in egg mixture until it begins to turn firm. Put cast iron pan in the oven and bake for 5 minutes. Take omelettte out and sandwich between bread slices; wrap well.

Cheweee tip

Using cast iron increases the iron content of this dish!

  • 90 ml extra-virgin olive oil
  • 375 g mushrooms, minced
  • 3 small to medium or two large eggs
  • Salt and pepper to taste
  • 2 slices whole-grain bread
