Lunch Box Burger Bites

Place mince in a bowl and add grated onion, garlic, crumbled oxo cubes, parsley, salt, pepper (about a teaspoon of each) and tomato puree/ketchup. (At this point, you may also add alternate favourites such as chilly or herbs if you wish).
Then mix in gradually breadcrumbs until the mixture becomes of firm consistancy (ie.just firm enough for you to roll into small balls which you then flatten into burgers (size is your choice).
Heat olive oil in a frying pan and gently fry burgers until crispy on both sides or alternatively, place burgers on tin foil under the grill as a healthier option.
Leave to cool.
These can also be sliced and put into sandwiches with mustard or relish!

- Olive Oil
- 1 lb Very lean minced Beef
- 2 Medium Eggs
- Pkt Golden Breadcrumbs
- 1 Large Onion grated
- 3 Cloves garlic grated
- 1oz Fresh Parsley Chopped Finely
- 2 Beef oxo cubes
- 1 tablespoon tomato puree or ketchup
- Salt & Pepper (to taste)
