Mini muffin pizzas

Halve the muffins and spread with the (you can add chopped steamed broccoli or spinach to the sauce to help them get some veg).
Sprinkle pre-grated mozzarella cheese on top.
Bake for 5 minutes at 180˚C.
Allow to cool, then wrap up.
This is a really versatile dish - try different sauces like marinara style, mushroom, or red pepper and blend in any cooked veg the kids will eat (red peppers add a lovely sweetness). Why not try with some sweetcorn or ham on top too?
