Easy homemade coleslaw

Chop the onion in half, then slice it into very thin half-moon shapes. Put the onion pieces into the large bowl.
Peel and coarsely grate the carrot. Peel away the outside layer of leaves of the cabbage and chop in halves or quarters then slice thinly into strips no wider than about ½ centimetre and about 3cm long. Add these to the bowl and mix them in with the onion and carrot.
Add 3 tablespoons of mayonnaise and 3 tablespoons of yoghurt to the vegetables and stir through until evenly mixed. Add some black pepper to taste. Refrigerate until needed.
If your kids like them, try adding sultanas or peanuts for extra flavour and goodness.
- 1 small red onion
- 2 medium sized carrots
- a small white cabbage
- Jar of mayonnaise
- Large pot of greek yoghurt
- Black pepper
